Because 2015 was a year with an early frost and two tough winters before it, the fruit Hinterland brought in from their own vineyard equaled 65% Chardonnay and 35% Pinot Noir (and not a lot at that) … they treated it with extra love and care, because it was all they had and once they put it to bed for its second fermentation let it rest for 33 months. All that extra care and attention created one of Jonas’ best and yet most approachable bubbles to date: crisp and lively with the typical biscuit and apple-y note you’d expect adding lemon drop and bosc pear into the mix and then punctuated with great acid backbone on the finish.
